Weekend Wrap Up-Sweet And Savory Breakfast Pizza And A B-day Wish

Hey there, everyone! I hope you all have had a great weekend. Ours has been fairly uneventful, but there is nothing wrong with a low key weekend! I figured I would just highlight some things.

When I got home from work on Friday I had a package on my porch. It was a dress I ordered for our anniversary dinner. I loved it as soon as I tried it on! 

What do you think?!

SATURDAY:

When I woke up it was snowing! I swear our weather went from summer to winter, which bums me out. Still feeling a touch under the weather, I relaxed by our fireplace for a while. 

My husband and I went to the gym a little later in the day, then spent the rest of the day/evening at home watching football and Stranger Things. 

SUNDAY:

I was super hungry this morning so I decided to make a breakfast pizza! I did half savory and half sweet. 

To make the crust I used flatout bread sprayed with cooking spray and baked at 350 degrees F for 7 minutes. 

For the savory side, I topped it with sweet potatoes (cooked in coconut oil), pepperjack cheese, a fried egg, and hot sauce.

For the sweet side, I topped it with cashew butter, cocoa nibs, honey, and cinnamon. 

YUM!!!! 

The rest of the day has been spent cleaning and grocery shopping. We plan on carving our pumpkin before dinner, then we will watch more Stranger Things before The Walking Dead comes on.

Now, onto a super special birthday wish!! My dad would have turned 67 today. He passed away in 2012 and I miss him more than I will ever be able to write in words. He was strong, smart, funny, and just a hell of a guy.

Cheers to you, daddy.

Incline/Decline Treadmill Workout, Packing, And Pizza

Happy hump day, friends! How is your week treating you so far!? Mine has been busy, but great. 

MONDAY:

The morning started with a 5:45 a.m. spin class and a drive to my home town.  It poured rain the whole hour and a half drive. I picked up Starbucks when I got to town and stopped by my best friend’s house for a short visit. 

Once I left her house and had a small lunch, I went to my mom’s place. She is moving on Saturday so we spent a few hours going through her things and packing. After packing, we were hungry so we met my best friend at Spinozas. It is the BEST pizza I have ever had! 

I had a greek salad and split their Margarita pizza with my mom! So good!!

After dinner, we watched the finale of the Bachelorette, then called it a night.

TUESDAY:

The morning started with Starbucks, because obviously it’s a necessity. Haha! Joking…kind of. After coffee and food, it was time to workout. I did one of my favorite treadmill workouts, which I am excited to share!

INCLINE/DECLINE TREADMILL WORKOUT

Start with a warmup and a mile build (I included my warmup in my 1 mile build)

After a mile, turn your incline up to 15. Once you get there, you will jog .20 of a mile, then take your incline to a 14 and walk .10 of a mile. Next, take the incline to 13 and jog .20, then down to 12 and walk .10. Repeat this until you get to an incline of 3.

The whole workout is 3 miles (not including warm-up and cool down).


Notes: 

*if the incline is too much, start at one you are comfortable at.

*you can always speed walk instead of jog.

*listen to your body! Incline workouts are hard and only do what you can.

*I am not a personal trainer and only post workouts that work for me and my body! Only do what works for you!! 

The workout was sweaty and went by quickly! Always a great way to start the day! 

Afterwards was some more packing and lunch before heading home.

Pizza Grilled Cheese And A Home Town Visit

Hi there, everyone! I hope the week is treating you well. Mine has been great and here is why…

Tuesday:

After an early workout, I drove to my home town to visit. Stop one was my best friend’s house. We went to Starbucks, followed by lunch at Mimi’s Cafe! It was so much fun spending time with her. I am trying to see her as often as possible before the school year starts and I go back to work.

Next, I went to my mom’s house to celebrate my nephew’s 5th birthday. We played at the pool and had a lot of fun.

A little later, my friend came over and we cooked together. The meal was so easy and SO tasty!!

PIZZA GRILLED CHEESE:

INGREDIENTS:

  • Thick bread (we used a whole wheat bread)
  • Cheese slices (we used mild cheddar)
  • Pizza or pasta sauce (we used tomato basil pasta sauce)
  • Pepperoni  (we used turkey pepperoni)
  • Fresh basil 
  • Butter  (we used earth balance)

 DIRECTIONS:

  • Butter one side of each slice of bread
  • Add sauce, cheese, more sauce, pepperoni, and basil
  • Top with other slice of bread 
  • Butter side down, place into a pan on medium heat until slightly brown on both sides 


I loved it so much that I made one for lunch the next day!

WEDNESDAY:

The day started with a workout at my mom’s apartment gym.

Afterwards, we went to Starbucks and met up with my best friend and her two little ones. I just adore them.

Once we were finished with coffee, we went to see my dad and grandparent’s graves. The cemetery is absolutely beautiful and the day was perfect. I felt at peace this visit. Sometimes it is too much and I cry (a lot), but not this time. 

Such a peaceful day.



After our visit and lunch, I drove back home to my cats and amazing husband. I always miss them so much when I’m gone!
