Banana Egg Pancakes With A Boost

Hello! We are back from a wonderful trip up North for my brother-in-law’s wedding. It was small, family only, and beyond perfect. We have been incredibly busy with a move, and two weekends of weddings, but now we are back and settling in which feels SO nice. Anyway, I will share more on that later. Let’s get to the point of this post….

PANCAKES!

I’m sure many of you have tried banana egg pancakes. I like them, but usually want something more substantial and satisfying. Well, after a lifting workout, I decided to make them with a few yummy additions. I devoured the whole thing.

My favorite added ingredient is leftover Criobru grounds. I have mentioned Criobru on the blog before. It brews like coffee,  has SO many health benefits, and is essentially caffeine free. I have been trying to cut back some, and it gives me a boost in the afternoon when I need it. Plus, the taste is incredible!

INGREDIENTS:

*2 eggs
*1 banana
*1/4 cup of almond flour
*1/2 tsp of cornstarch
*Leftover Criobru grounds

TOPPING:
*Almond butter
*Coconut Oil

DIRECTIONS:

*Mash banana and mix with the eggs.
*Add in all other ingredients and mix well.
*Heat a skillet with a little coconut oil and cook 1/4 of batter on both sides. Continue until all batter is used. I made 4 pancakes.
*Melt some almond butter and coconut oil together and pour over pancakes.
*Add any additional toppings you want and eat!

Almond Butter Protein Pancakes

Happy Saturday, everyone! I feel like this is the first time I have been able to relax all week. Fixing up a new home has been more work than I ever imagined. I am so thankful for my husband and the way he stays positive throughout the whole process.

We have a lot to do today, but this morning I spent some time focusing on myself by making healthy pancakes, drinking coffee, and opening the windows to enjoy the BEAUTIFUL weather we are finally having.

I LOVE pancakes. I have since I was little. My mom always made them in the shape of Mickey Mouse. The only thing I don’t enjoy is the painfully full feeling once I am finished eating. I have been super into healthy eating for some years now and decided to make an almond butter protein version of my favorite comfort meal. This was SO easy because I have a protein mix called BIRCH BENDERS (just add water) pancake mix. It has 16 grams of protein and only 180 calories per serving. SCORE! These are filling, but don’t make you so full that you can’t move.

I love this mix so much! I would absolutely recommend it. I bought mine at Whole Foods.

INGREDIENTS:

This recipe serves 1 person.

For the pancakes:

  • 1/2 cup of Birch Benders pancake mix
  • 1/4 cup + 2 TBSP of water
  • 1 TBSP almond butter (creamy-I used Trader Joe’s version because it mixes so well)

For the topping:

  • 1 TBSP almond butter
  • 1 TBSP honey
  • 1 TBSP cacao nibs

DIRECTIONS:

  1. Place a pan on the stove over a medium heat.
  2. Meanwhile, mix together pancake mix, water, and almond butter until smooth.
  3. Once the pan is hot, spray with cooking spray.
  4. Take 1/4 cup of mix and place into the pan. Cook until the top bubbles slightly and flip. Cook side two until slightly brown.
  5. Repeat step 4 until you have 3 pancakes.
  6. Assemble pancakes on a plate and drizzle with almond butter, honey, and top with cacao nibs.
  7. Dig in!!

This was SO tasty and easy to make!! I enjoyed mine with two cups of dark roast coffee!

Isn’t it beautiful?!?! Haha! Also, how pretty are my flowers? My sweet nephews and niece sent them to me for my birthday! I love them so much!
