Our Valentine’s Day

Hello, everyone! I hope the week is treating you well. K has had quite a few no nap days, leaving this mamma pretty tired. I am SO thankful that she sleeps well at night! I planned on posting this on Monday, but you know, mom life.

Anyway, we had low-key Valentine’s Day, but I wanted to share.

My husband surprised me on Wednesday with beautiful flowers and my favorite almond butter. He usually waits until the day of, when all the flowers are picked over, but was sweet to go early this year!

Love them!

On Sunday, my sister-in-law came over and spent the day with us. We did some baking and hanging out!

Almond flour cinnamon rolls! These are delicious. We topped them with Simple Mills vanilla frosting.
Chocolate protein balls. Yum!

My sister-in-law left when we put K down for bed.

Once the house was picked up, I took a bath while my husband when to get us takeout.

We got Chinese, then spent the evening catching up on Hell’s Kitchen and relaxing! It was so nice.

So yummy!!!

Holiday Baking And Christmas At Home

Hello, hello! I hope the Holiday season is treating you well. Things have been non-stop around here, and are just settling down. Christmas this year was wonderful for our family. I love being home and having no place to travel. Doing our best to stay covid safe, we saw immediate family only. I definitely missed seeing extended family this year, but feel like we made the right decision.

I wanted to highlight some baking, and Christmas fun from the past week! Let’s start back at Wednesday….

WEDNESDAY: I got to spend some time with one of my very best friends. We had wine flights at Coopershawk and enjoyed catching up! Neither of us have been out much lately, so it was fun to safely see her!

Coopershawk has the BEST wine selection! I always get the fruit ones.

THURSDAY- CHRISTMAS EVE: We always do our stockings on Christmas Eve morning! It is a fun tradition for us.

My sister-in-law lives in town and spent the afternoon with us. We did some baking (all using healthier ingredients)! It was so fun!

Sugar cookies!

Homemade cinnamon rolls using almond flour! These were amazing!!!!! We even made our own frosting. 10/10 for me.

After all of our baking and getting K down for bed, we ordered Chinese food and watched a movie.

FRIDAY- CHRISTMAS DAY:

My Christmas excitement woke me up early so I made coffee and did a quick workout before everyone was up.

We relaxed until my husband’s family came over! My mom joined a little while later. We had a wonderful time opening gifts, eating and just hanging out.

We all watched a movie and played games that evening.

It was a wonderful Christmas!

Healthy Cinnamon Sugar Mini Donuts

Hello, all! Happy hump day! I hope the week is treating you well. I am keeping busy with my active, fun toddler. The weather has been incredibly warm, but sadly the rest of the week looks chilly. I already miss the warm weather and outside time. On a huge plus, we get the keys to our new home a week from Friday! I have SO much excitement about it!!

Anyway…

Last week, I saw a recipe for healthier donuts. I barely had the ingredients I needed, so I decided to throw some together and hope for the best. Sometimes this fails miserably, but not this time. These donuts were so yummy!! We have already finished 2 batches, and I plan on making more today. They are mom and toddler approved!! Plus, K loves to help stir the batter.

INGREDIENTS:

*1 cup of GF (or regular) pancake mix. *1/4 cup of almond flour. *1/2 of a banana. *1/4 cup of almond butter. *2 TBSP of honey. *Almond milk. *Topping: 1 TBSP of melted coconut oil, 1 tsp of truvia or sugar, 1 tsp of cinnamon.

TO MAKE:

1) Preheat the oven to 350 degrees F. 2) Meanwhile, mix the first 5 ingredients together. 3) Add in almond milk-a little at a time, until the batter is smooth. 4) Pour batter in a greased mini muffin tin (this makes 12 ) and bake for 13 minutes. 5) While baking, make the topping by mixing the sugar and cinnamon with the coconut oil. 6) Pour topping over your mini donuts (or muffins) and enjoy warm!

There you have it! Super easy, healthy, and yummy!

Foodie Friday-My Favorite Eats This Week

Hello and happy Friday!! Did the time change throw anyone else off? The whole past week has been rough on me and my daughter’s sleep. My husband seemed unfazed though! I have been waking up incredibly early, and falling asleep early as well. I finally feel like my body has regulated. Last night I fell asleep at 8 and didn’t wake up until 6 this morning. I missed a class that I teach unfortunately, but my body needed it!

Moving on, let’s talk food. Starting off, I have to share my newest obsession. Weeks ago, I was at Sam’s Club and had a sample of these dried mushrooms. I didn’t know I would like them, but OH MY GOSH they are amazing!!!! I can’t stop eating them!

Seriously….go get these!!!

Moving on to some dinners…

Chipotle bowl, but I put all of my toppings on cauliflower rice that I made at home! YUM!!
Farmhouse Chili with homemade almond flour cornbread muffins. They were fantastic!
A huge salad from Core Life Eatery!
Chicken, veggies, and avacado over cauliflower rice.
Spaghetti Squash with sautéed spinach, pesto, cheese, and garlic. SO yummy!!

Now onto baking and breakfast…

Banana egg pancakes with almond flour, Criobru grounds, topped with melted coconut oil and almond butter.

A Little Update, Today’s Workout, And My Baked Oatmeal Recipe

Hello, hello!! Happy Friday! I have struggled to keep a consistent writing schedule, but that’s mom life I guess. We are currently in the car on our way to North Carolina for vacation. The Outer Banks is my favorite vacation spot, and we have been going since I was little. I am SO excited to be there. We have 8 hours of driving today, and right around 3 tomorrow. What a perfect time to write!

Anyway…let’s start with life lately. Last weekend, we went to Boo At The Zoo. They did a great job keeping it covid friendly and safe all around!

I love this little teddy bear SO much.

Also, in honor of the season, we have been enjoying our porch decorations.

K placed and colored most of the pumpkins and gords. Haha. I love the orange lights in the dark!

We get the keys to our new home the weekend before Thanksgiving! We are thrilled. The build is going so well, and it has been so fun watching the progress! Ahhh!!! Other than that, K has been enjoying gymnastics, and I got to have a much needed and long overdue wine date with one of my best friends!

Moving on…Today’s Treadmill Workout

I woke up early to sneak in a quick workout before our long drive. I like to get my blood flowing before sitting all day! I do this often, especially when I need a quick, yet efficient workout. *Please note that I only post workouts that work for me and my fitness level!

*1 mile jog, building pace. Then do a minute walk before getting into the main part of the workout. *6 rounds: 1 minute jog, 1 minute run, 1 minute walk. *Cool down and stretch

That’s it! Quick and to the point.

Moving on again….Let’s Bake

BAKED OATMEAL RECIPE:

Items Needed: 2 cups of oats, 1 cup of almond flour, 2 eggs, 1/2 cup of almond milk, 1/2 cup of almond butter, 1/2 cup of honey or maple syrup, 1 tsp of baking powder, 1 tsp vanilla, pinch of salt, dark chocolate chips

Mix everything well, and bake in an 8×8 dish for 30 minutes at 350 degrees F. I think next time I would add a banana to make it a bit more moist. It was a bit dense, but I enjoyed it a lot! It was also toddler approved!

Yum! I topped mine with melted almond butter.
