A Little Update, Today’s Workout, And My Baked Oatmeal Recipe

Hello, hello!! Happy Friday! I have struggled to keep a consistent writing schedule, but that’s mom life I guess. We are currently in the car on our way to North Carolina for vacation. The Outer Banks is my favorite vacation spot, and we have been going since I was little. I am SO excited to be there. We have 8 hours of driving today, and right around 3 tomorrow. What a perfect time to write!

Anyway…let’s start with life lately. Last weekend, we went to Boo At The Zoo. They did a great job keeping it covid friendly and safe all around!

I love this little teddy bear SO much.

Also, in honor of the season, we have been enjoying our porch decorations.

K placed and colored most of the pumpkins and gords. Haha. I love the orange lights in the dark!

We get the keys to our new home the weekend before Thanksgiving! We are thrilled. The build is going so well, and it has been so fun watching the progress! Ahhh!!! Other than that, K has been enjoying gymnastics, and I got to have a much needed and long overdue wine date with one of my best friends!

Moving on…Today’s Treadmill Workout

I woke up early to sneak in a quick workout before our long drive. I like to get my blood flowing before sitting all day! I do this often, especially when I need a quick, yet efficient workout. *Please note that I only post workouts that work for me and my fitness level!

*1 mile jog, building pace. Then do a minute walk before getting into the main part of the workout. *6 rounds: 1 minute jog, 1 minute run, 1 minute walk. *Cool down and stretch

That’s it! Quick and to the point.

Moving on again….Let’s Bake

BAKED OATMEAL RECIPE:

Items Needed: 2 cups of oats, 1 cup of almond flour, 2 eggs, 1/2 cup of almond milk, 1/2 cup of almond butter, 1/2 cup of honey or maple syrup, 1 tsp of baking powder, 1 tsp vanilla, pinch of salt, dark chocolate chips

Mix everything well, and bake in an 8×8 dish for 30 minutes at 350 degrees F. I think next time I would add a banana to make it a bit more moist. It was a bit dense, but I enjoyed it a lot! It was also toddler approved!

Yum! I topped mine with melted almond butter.

Fall Baking Favorites

Hello, all!! I hope you are well. Fall is my absolute favorite season. I love the cool air, the activities, and best of all…the baking!! I have been doing a lot of baking lately…with a little help stirring from my sweet girl! I just wanted to share some favorites so far.

Almond flour apple muffins. I used the apples we picked from Lynd Fruit farm! They were so yummy!
This apple crisp was a traditional one because my husband didn’t want my healthy version haha. He devoured it!
Roasted pumpkin seeds! These have olive oil, salt, pepper, and a little seasoning salt.
Almond flour pumpkin muffins with dark chocolate chips! These are my favorite!!
This is a healthy apple crisp made with almond flour! It was so delicious, I ate half of it for lunch the day I made it!

Most of these recipes I found on Pinterest! I also made pumpkin pancakes and plan on making some pumpkin pie overnight oats next!
