Hello, all! Happy Friday! I just got the baby to bed, and am eating leftovers. My husband is going out with friends tonight, so I’m trying to find something good to watch on Netflix.
This past week was a trying week for us. I won’t go into details, but I sure am glad it is coming to an end. I will say that hugs and kisses from my sweet little girl heal my heart. Gosh, I love her more than anything!!
Another positive to the week was good food! I decided to mix up our meals, and was so glad I did. I love making healthier versions of typically unhealthy food.
We had loaded nachos on Monday, and they hit the spot. I make two different versions for my husband and myself. Mine had bean chips, lean ground beef, black bean and corn salsa, cheese, and lime juice. I wanted plain greek yogurt to sub for sour cream, but didn’t have any. This meal was excellent!
Another night, we had buffalo ranch chicken sandwiches. I used a rotisserie chicken, one packet of ranch seasoning, and buffalo wing sauce. I put mine on an English muffin with cheese. Easy, and so delicious! Of course I had a salad with it!
I had a friend come over last night, and decided to make a chicken noodle casserole. It had whole wheat egg noodles, tons of mixed vegetables, cream of chicken, cream of celery, milk, and chicken. It was great! That is tonight’s dinner as well!
