Hi friends!! Happy Saturday to you! I hope it has been great. We have been doing house work most of the day, but I managed to sneak in a stair workout (in the 80 degree heat), a short nap, and a few episodes of Fixer Upper.
Today for lunch, I made a salad with some leftovers and it turned out really tasty! I enjoyed it with a slice of toasted 15 grain bread with butter and garlic salt.
In the salad: mixed greens, leftover grilled chicken, carrots, leftover pasta salad, shredded cheese, and Greek yogurt ranch dressing (Boathouse Farms). YUM!!
A little later, I noticed that I had some bananas that were browning and needed to be used up! I love banana bread, so I tweaked a recipe found online. I was very pleased with the taste of these!! They will get eaten quickly around here.
INGREDIENTS:
- 1 cup of oats
- 2 TBSP of brown sugar
- 1 tsp of baking powder
- 2 tsp of cocoa powder
- 1 egg
- Pinch of salt
- 2 bananas, mashed
- 1/4 cup of almond butter
- 2 heaping TBSP of white whole wheat flour
- Handful of dark chocolate chips
DIRECTIONS:
- Preheat oven to 350 degrees Fahrenheit
- Mix all ingredients thoroughly in a medium sized bowl
- Pour batter into round, greased pan (or pan of choice, 8×8)
- Bake for 20 minutes
- Remove and let cool
- Slice into triangles
- Enjoy!!
These would be awesome with drizzled almond butter on top, or some nuts added in it! I hope you guys enjoy!! Have a great rest of your weekend!
