Almond Butter And Chocolate Banana Bread

Hi friends!! Happy Saturday to you! I hope it has been great. We have been doing house work most of the day, but I managed to sneak in a stair workout  (in the 80 degree heat), a short nap, and a few episodes of Fixer Upper. 

Today for lunch, I made a salad with some leftovers and it turned out really tasty! I enjoyed it with a slice of toasted 15 grain bread with butter and garlic salt.

In the salad: mixed greens, leftover grilled chicken, carrots, leftover pasta salad, shredded cheese, and Greek yogurt ranch dressing (Boathouse Farms). YUM!!

A little later, I noticed that I had some bananas that were browning and needed to be used up! I love banana bread, so I tweaked a recipe found online. I was very pleased with the taste of these!! They will get eaten quickly around here. 

 INGREDIENTS:

  • 1 cup of oats
  • 2 TBSP of brown sugar
  • 1 tsp of baking powder 
  • 2 tsp of cocoa powder 
  • 1 egg 
  • Pinch of salt 
  • 2 bananas, mashed
  • 1/4 cup of almond butter 
  • 2 heaping TBSP of white whole wheat flour
  • Handful of dark chocolate chips 

DIRECTIONS:

  • Preheat oven to 350 degrees Fahrenheit 
  • Mix all ingredients thoroughly in a medium sized bowl
  • Pour batter into round, greased pan (or pan of choice, 8×8)
  • Bake for 20 minutes 
  • Remove and let cool 
  • Slice into triangles 
  • Enjoy!! 

These would be awesome with drizzled almond butter on top, or some nuts added in it! I hope you guys enjoy!! Have a great rest of your weekend!

Chocolate Peanut Butter Overnight Oats

Happy Friday!! We made it! I guess I can’t officially say that until 3:45 when I get to leave work, but the weekend is just so close.  I hope you guys have fun plans for the weekend! My husband and I are visiting his home town to see his family and celebrate a special little girl’s first birthday. 

I have been craving overnight oats like crazy lately! I haven’t made them in a while, so last night I decided to make a bowl to throw in the fridge and enjoy this morning. They were so tasy, especially with the toppings I used! Plus, I had 2 cups of coffee to wash them down. 

Here is the recipe I used!

INGREDIENTS:

  • 1/2 cup of oats
  • 1/4 cup of vanilla greek yogurt 
  • 1/3 cup of almond milk (or milk of choice)
  • 1 scoop of chocolate peanut butter protein powder  (I use Ideal Lean and it has a delicious flavor)
  • 1 TBSP chia seeds 
  • 1 TBSP of truvia  (or sweetener of choice)
  • Any toppings you like  (I used skinny girl dark chocolate covered almonds, sliced bananas, and honey almond granola) 

DIRECTIONS:

  • Mix everything  (minus toppings) into a bowl and place in the fridge overnight 
  • In the morning, take oat bowl out and add a splash of milk. Stir.
  • Add any toppings you like
  • Enjoy!! 


Before and after toppings! Adding some drizzled peanut butter on top would be an excellent addition as well! YUM!

Healthy Chocolate Peanut Butter Milkshake 

Happy hump day, everyone!! I hope you are having a great week. Mine has been crazy. We have basically been remodeling the complete inside of our new home. It has been exhausting,  but it is starting to look beautiful, and I feel extremely blessed. 

We have been eating a lot of fast food lately with the move,  which makes it hard to be healthy, but it is quick and easy. I’m ready to be all moved in so I can cook again. This morning after my workout,  I was craving something sweet, but healthy.  The thought of a clean milkshake made my mouth water.

This recipe was super easy and included my favorite protein powder and Halo Top ice cream. If you have never tried Halo Top you are missing out! It is delicious and so healthy. Win!! 

I use Ideal Shape chocolate peanut butter protein powder.  It is SO good. I love all of their flavors,  but this is my favorite.  Feel free to use a different brand if you like. I also used the vanilla bean Halo Top ice cream. They have a peanut butter cup flavor, but it wasn’t in stock when I went to the store.

INGREDIENTS:

  • 1 scoop of chocolate peanut butter protein powder
  • 1/3 cup of vanilla bean or peanut butter cup Halo Top ice cream
  • 1 and 1/2 cups of almond milk 
  • 1/2 cup of water

DIRECTIONS:

  • Mix all ingredients in a blender until smooth.
  • Serve and enjoy!
