Weekend Wrap-Up (Food, Fitness, Fireplaces, And Family Time)

Hello, all! Another Monday came too soon…

I hope you had a nice weekend! I tried to catch up on sleep, which a did a little. We weren’t too busy, so that was nice. I can’t believe how chilly the weather is. It feels like we skipped fall (my absolute favorite) and headed straight for winter. Boooo. I am super happy that my mums bloomed so nicely though!

Here’s the recap:


The morning started early with coffee and teaching. I had 6 classes, which is more than I typically do! I love the extra money, but the sleep would have been nice, too.

After teaching and breakfast, I did a barre workout in my basement. I love prenatal barre because it gives me a great workout while staying low impact!

After my workout, my husband grabbed us lunch from Chick-Fil-A, then we watched football by the fireplace. I officially am using my fireplace constantly! Haha!!

I had a wrap with a superfood side salad.

After the game and relaxing, we both started working on house stuff. My husband cut the grass and worked in the garage while I cleaned.

By evening, I had a shower and made a quick dinner before watching a movie with my hubs.


I slept in a bit which felt great! I made coffee and did a short prenatal yoga video.

My husband and I got ready, then met my mom and her friend for brunch at Northstar cafe! My husband and I spit a blueberry muffin before our meals came out.

I had the sweet potato and turkey hash. It was delicious!

After we ate, we did some shopping and I got an outfit for sweet baby.

When we got home, I took a short nap before finishing my cleaning and going to the grocery store.

For dinner, we made pizzas and they were delicious!

Bedtime came early!

Brunch Dates and BABY News

Hellloo, everyone! How is your Saturday treating you?

I taught a few online classes this morning, went to the gym for a short treadmill workout, then had a brunch date with my husband.

We went to a favorite spot of our called Scramblers. It was so tasty.

I had scrambled eggs, turkey sausage, an English muffin, and fruit.

It hit the spot.

Now, onto another topic:

I’m pregnant!!

It has been a whirlwind up to this point, as I am coming up on 13 weeks.

There’s my little peanut!

How we announced it….

We are so excited and so in love already!

My experience so far has had it’s ups and downs. Here’s what I have realized:

1) The exhaustion I have felt has been like none other. I feel tired most of the time.

2) Morning sickness should be called all day sickness. I’ve had it pretty rough, but have finally started to feel better most days! Yay!

3) Food I once loved makes me sick to look at. Meat has been the worst. Just the sight makes my stomach turn. I’ve finally had some chicken and a few other things, but it isn’t quite what it used to be. Sometimes all that sits is bagels and fried food and that’s okay!

4) I’m still working out, but the motivation has been lacking a bit. I want to stay healthy for me and the little one!

5) Days can be hard, but hearing your baby’s heartbeat for the first time is the best sound in the world.

6) I’m so in love with this little being!

Healthy Breakfast Tacos And Air Fried Sweet Potatoes

Happy hump day, friends!! I am still on winter break and enjoying every relaxing second of it. Today I am heading to visit my family and can’t wait to see my new niece. 

Anyway, this past Saturday one of my very best friends came to visit and stay the night. She has been my cooking buddy since college, so in the morning, after church, we went to the market to get food for brunch. We decided on breakfast tacos and they were delicious!!



For the tacos:

  • Eggs 
  • Veggies  (we used peppers and onions)
  • Cheese (we used cheddar)
  • Tortillas (we used corn)
  • Turkey sausage  (we used this as a side, but you can cut it up for the tacos)
  • Salt and pepper
  • Avacado, salsa and any other toppings of choice 

For the sweet potatoes 

  • 2 large sweet potatoes, cut into chunks 
  • 1 TBSP melted coconut oil 
  • Salt and pepper


  1. Add veggies in a large pan with a little olive oil and cook until soft
  2. Once veggies are soft, add in your eggs and mix everything together 
  3. Keep heat low to medium and stir as needed
  4. Meanwhile, mix your chopped up sweet potato in the melted coconut oil and place in air fryer at 350 for about 15 to 20 minutes  (shake half way through)
  5. Make sausage according to package 
  6. Once eggs are cooked, add cheese and seasonings 
  7. Once everything is cooked, assemble tacos and enjoy!!
