A Little Update, Today’s Workout, And My Baked Oatmeal Recipe

Hello, hello!! Happy Friday! I have struggled to keep a consistent writing schedule, but that’s mom life I guess. We are currently in the car on our way to North Carolina for vacation. The Outer Banks is my favorite vacation spot, and we have been going since I was little. I am SO excited to be there. We have 8 hours of driving today, and right around 3 tomorrow. What a perfect time to write!

Anyway…let’s start with life lately. Last weekend, we went to Boo At The Zoo. They did a great job keeping it covid friendly and safe all around!

I love this little teddy bear SO much.

Also, in honor of the season, we have been enjoying our porch decorations.

K placed and colored most of the pumpkins and gords. Haha. I love the orange lights in the dark!

We get the keys to our new home the weekend before Thanksgiving! We are thrilled. The build is going so well, and it has been so fun watching the progress! Ahhh!!! Other than that, K has been enjoying gymnastics, and I got to have a much needed and long overdue wine date with one of my best friends!

Moving on…Today’s Treadmill Workout

I woke up early to sneak in a quick workout before our long drive. I like to get my blood flowing before sitting all day! I do this often, especially when I need a quick, yet efficient workout. *Please note that I only post workouts that work for me and my fitness level!

*1 mile jog, building pace. Then do a minute walk before getting into the main part of the workout. *6 rounds: 1 minute jog, 1 minute run, 1 minute walk. *Cool down and stretch

That’s it! Quick and to the point.

Moving on again….Let’s Bake

BAKED OATMEAL RECIPE:

Items Needed: 2 cups of oats, 1 cup of almond flour, 2 eggs, 1/2 cup of almond milk, 1/2 cup of almond butter, 1/2 cup of honey or maple syrup, 1 tsp of baking powder, 1 tsp vanilla, pinch of salt, dark chocolate chips

Mix everything well, and bake in an 8×8 dish for 30 minutes at 350 degrees F. I think next time I would add a banana to make it a bit more moist. It was a bit dense, but I enjoyed it a lot! It was also toddler approved!

Yum! I topped mine with melted almond butter.

Foodie Friday-This Week In Tasty Dinners And More Baking

Hello and happy Friday, all! I hope you are staying safe and well. Things around here are beginning to slowly open. Baby K and I have been getting fresh air on the warm days, and especially love when my mom has social distancing walks with us!

As far as food goes, we have had some delicious things lately.

My husband grilled blueberry brats and jalapeno pineapple brats one night, and they were amazing. I put mine over a salad. We had cheesy rice and corn on the cob, too!

While scrolling Facebook one day, I came across buffalo chicken enchiladas and just HAD to make them! They were SO tasty!!

That same night, my sister-in-law and I made double chocolate avacado muffins. Even my husband loved these, which is rare with my healthy desserts.

We did Chinese takeout one night because all of us were craving it. I love that they offer healthy options!

This yummy bowl was from a place called Chop 5! You can make salads or grain bowls. I chose brown rice with lots of tasty toppings! K loved her kids sized bowl with quinoa, cheese, and egg!

Foodie Friday-This Week In Dinners And Baking

Hello and happy Friday, all! I am looking forward to a weekend with my little family. I hope to get baby K’s pool out, play with bubbles, and take a lot of walks.

K has been SO energetic lately, and is becoming more of a toddler every day. I love her personality! I can’t wait to get her back to gym class with her buddies. Her curly hair is the best. I try to put it in a pony, but she always pulls it out. Haha!

Anyway, let’s talk food. My sister-in-law and I watch a lot of Nailed It, and decided to make cake pops. They aren’t the prettiest, but sure do taste good! I’ve had them with my coffee the past few days.

We had so much fun making these! We didn’t have mini chocolate chips, but will definitely add those next time. The recipe was for a healthier version!

As far as dinners go, we have been eating very well! Here are some favorites..

Cast iron chicken, coleslaw, and cauliflower mac cheese!

My mom came for a social distance walk with me and baby K. We had Northstar Cafe in between our walks, and I had the veggie burger with broccoli and peanut sauce! It was delicious!!!

Roast on an English muffin and sweet potatoes!

I also have done a couple loaded salads, and have been filling up on lots of fresh fruit! Yum!!

Also, another favorite snack lately is plain greek yogurt with a touch of honey, fruit, and sea salt dark chocolate granola.

We are definitely loving our food lately!!

An Apple Picking Date, Market Finds, And A Moment Of Clarity

Hi there and happy Sunday! I hope you all have had great weekend so far. My car has been acting up so my hubs is working on it while I write. 

Yesterday, my husband and I went on our annual apple picking date to Lynd Fruit Farm. We always have so much fun walking through and tasting the apples. We buy a large bag to fill so we have plenty to eat and more to bake with. 

I love eating the apples straight off of the trees.

After picking our apples, we headed over to the farm’s market for some goodies! 

We left with apple butter, sweet and fresh pickles, chili mix, apple cider, pie, and sweet potatoes. Everything at the market is DELICIOUS! We also bought a pumpkin to carve this week.

Once we got back to our place from the market, we decided to make a Kroger run so we could cook and finish our date night at home. 

For dinner, we made chili with the mix we got at the market and cornbread muffins. We also made a warm spiked cider with apple cider, vanilla vodka, cinnamon and brown sugar. We put the ingredients in our crockpot until warm. 

Dinner was fantastic!

After dinner, I made an apple bread with some of the fresh apples we picked. I found a recipe on Pinterest that was healthy, and it turned out amazing!! I had it for breakfast and topped it with apple butter. A perfect fall breakfast alongside a nice cup of coffee. 

Once I finished breakfast and some cleaning, my friend came over and we drove to church together. The service spoke to me in a way I needed badly this morning. I had such a sense of clarity by the time the pastor finished. 

I have had a lot going on in my life lately, but I feel prepared to make myself better, and to work hard to make my dreams a reality. More on that later! Just please send positive vibes my way!! 

The rest of my day will be filled with hanging out at the shop while my husbad works. He seriously is the best. I’m a lucky gal!
