Hello! We are back from a wonderful trip up North for my brother-in-law’s wedding. It was small, family only, and beyond perfect. We have been incredibly busy with a move, and two weekends of weddings, but now we are back and settling in which feels SO nice. Anyway, I will share more on that later. Let’s get to the point of this post….
PANCAKES!
I’m sure many of you have tried banana egg pancakes. I like them, but usually want something more substantial and satisfying. Well, after a lifting workout, I decided to make them with a few yummy additions. I devoured the whole thing.
My favorite added ingredient is leftover Criobru grounds. I have mentioned Criobru on the blog before. It brews like coffee, has SO many health benefits, and is essentially caffeine free. I have been trying to cut back some, and it gives me a boost in the afternoon when I need it. Plus, the taste is incredible!
INGREDIENTS:
*2 eggs
*1 banana
*1/4 cup of almond flour
*1/2 tsp of cornstarch
*Leftover Criobru grounds
TOPPING:
*Almond butter
*Coconut Oil
DIRECTIONS:
*Mash banana and mix with the eggs.
*Add in all other ingredients and mix well.
*Heat a skillet with a little coconut oil and cook 1/4 of batter on both sides. Continue until all batter is used. I made 4 pancakes.
*Melt some almond butter and coconut oil together and pour over pancakes.
*Add any additional toppings you want and eat!
