Holiday Baking And Christmas At Home

Hello, hello! I hope the Holiday season is treating you well. Things have been non-stop around here, and are just settling down. Christmas this year was wonderful for our family. I love being home and having no place to travel. Doing our best to stay covid safe, we saw immediate family only. I definitely missed seeing extended family this year, but feel like we made the right decision.

I wanted to highlight some baking, and Christmas fun from the past week! Let’s start back at Wednesday….

WEDNESDAY: I got to spend some time with one of my very best friends. We had wine flights at Coopershawk and enjoyed catching up! Neither of us have been out much lately, so it was fun to safely see her!

Coopershawk has the BEST wine selection! I always get the fruit ones.

THURSDAY- CHRISTMAS EVE: We always do our stockings on Christmas Eve morning! It is a fun tradition for us.

My sister-in-law lives in town and spent the afternoon with us. We did some baking (all using healthier ingredients)! It was so fun!

Cranberry orange muffins.
Banana bread.

Sugar cookies!

Homemade cinnamon rolls using almond flour! These were amazing!!!!! We even made our own frosting. 10/10 for me.

After all of our baking and getting K down for bed, we ordered Chinese food and watched a movie.

FRIDAY- CHRISTMAS DAY:

My Christmas excitement woke me up early so I made coffee and did a quick workout before everyone was up.

We relaxed until my husband’s family came over! My mom joined a little while later. We had a wonderful time opening gifts, eating and just hanging out.

We all watched a movie and played games that evening.

It was a wonderful Christmas!

Healthy, No Bake, Holiday Cookies And Christmas Plans

Hello, all! I woke up extra early today, but my daughter must have felt that because she is up an hour before she typically wakes up haha. Getting her out of bed is my favorite thing in the world. She gives the biggest smile, runs around in her crib, talks to the cats because they follow me, all with her curly hair in her face. Gosh, I love that kid so much!! Speaking of her, I am off to get her so this will be delayed until at least naptime lol!

Picking up and moving on. Christmas is right around the corner, which is crazy! I am super sad to be missing out on our typical extended family-filled evens, but also excited to be spending time with my family at home.

On Christmas Eve it will just be me, my husband, and K. We plan on spending the day in PJ’s, baking all the things, watching a family Christmas movie, and opening our stockings! Dinner will be takeout.

On Christmas day, we will get up, have coffee and breakfast, then open our gifts. Later in the day, my mom and my husband’s immediate family are coming over. It should be so fun! I LOVE hosting.

Let’s move on to some cookies, shall we?

K and I have been making some recipes together and this one turned out so good! She enjoys stirring and taste testing. I love egg free recipes because we can dig in while we stir.

INGREDIENTS: 2 cups of oats, 3/4 cups of almond butter, 1/4 cup of melted coconut oil, 1/4 cup of honey, 1 TBSP chia seeds, 2 TBSP almond flour, 1/4 cup of white chocolate chips, 1/4 cup of craisins, 1/4 cup of shredded coconut, pinch of salt

NOTES: I used bake believe white chocolate chips-this brand is keto and allergy friendly. I also used 50 percent less sugar craisins.

TO MAKE: Mix everything well and flatten onto a baking sheet. Once on the sheet, place it in the refrigerator for at least 30 minutes.

Mommy’s taste tester. These are definitely toddler approved!

TO MAKE CONTINUED: Remove from fridge and use your favorite cookie cutters to make shapes. These can also be formed into protein balls. We did both!

These are so yummy! My husband even loved them and he tends to stay away from healthy sweets!

Foodie Friday-This Week In Tasty Dinners And More Baking

Hello and happy Friday, all! I hope you are staying safe and well. Things around here are beginning to slowly open. Baby K and I have been getting fresh air on the warm days, and especially love when my mom has social distancing walks with us!

As far as food goes, we have had some delicious things lately.

My husband grilled blueberry brats and jalapeno pineapple brats one night, and they were amazing. I put mine over a salad. We had cheesy rice and corn on the cob, too!

While scrolling Facebook one day, I came across buffalo chicken enchiladas and just HAD to make them! They were SO tasty!!

That same night, my sister-in-law and I made double chocolate avacado muffins. Even my husband loved these, which is rare with my healthy desserts.

We did Chinese takeout one night because all of us were craving it. I love that they offer healthy options!

This yummy bowl was from a place called Chop 5! You can make salads or grain bowls. I chose brown rice with lots of tasty toppings! K loved her kids sized bowl with quinoa, cheese, and egg!

Foodie Friday-This Week In Dinners And Baking

Hello and happy Friday, all! I am looking forward to a weekend with my little family. I hope to get baby K’s pool out, play with bubbles, and take a lot of walks.

K has been SO energetic lately, and is becoming more of a toddler every day. I love her personality! I can’t wait to get her back to gym class with her buddies. Her curly hair is the best. I try to put it in a pony, but she always pulls it out. Haha!

Anyway, let’s talk food. My sister-in-law and I watch a lot of Nailed It, and decided to make cake pops. They aren’t the prettiest, but sure do taste good! I’ve had them with my coffee the past few days.

We had so much fun making these! We didn’t have mini chocolate chips, but will definitely add those next time. The recipe was for a healthier version!

As far as dinners go, we have been eating very well! Here are some favorites..

Cast iron chicken, coleslaw, and cauliflower mac cheese!

My mom came for a social distance walk with me and baby K. We had Northstar Cafe in between our walks, and I had the veggie burger with broccoli and peanut sauce! It was delicious!!!

Roast on an English muffin and sweet potatoes!

I also have done a couple loaded salads, and have been filling up on lots of fresh fruit! Yum!!

Also, another favorite snack lately is plain greek yogurt with a touch of honey, fruit, and sea salt dark chocolate granola.

We are definitely loving our food lately!!

Healthy Coconut Crust Cheesecake

Hello, everyone! I am halfway through my spring break and have been trying to relax, but keep busy enough not to be bored. I have had doctor’s appointments, seen friends, cleaned (a lot), and made tasty food!

This morning, I decided to tweak a recipe I make often and try out a new flavor and man did it turn out well!

A while ago, I found a recipe for a tart crust and it has been a staple for so many recipes. It is made with dates and cashews. Ummm SO easy and SO tasty!! For this recipe, I used coconut flavored cashews and it was delicious.

FOR THE CRUST:

*15 dates pitted and soaked until soft

*1 1/5 cups of coconut cashews.

CRUST DIRECTIONS:
*Using a high powered blender (or food processor), blend the dates and cashews thoroughly.

*Form crust into a round pan and place in the fridge until slightly hardened

    FOR THE CHEESECAKE (I make my filling by the slice, so if you do the whole thing adjust accordingly)

    *2 heaping TBSP of vanilla greek yogurt

    *1 TBSP of greek yogurt cream cheese

    *any toppings you like (I used bananas and melted dark chocolate)

    DIRECTIONS:

    *Mix cream cheese and greek yogurt until fully combined

    *Top crust with cheesecake mixture and top with desired toppings

    Dig in!!
