A Little Update, Today’s Workout, And My Baked Oatmeal Recipe

Hello, hello!! Happy Friday! I have struggled to keep a consistent writing schedule, but that’s mom life I guess. We are currently in the car on our way to North Carolina for vacation. The Outer Banks is my favorite vacation spot, and we have been going since I was little. I am SO excited to be there. We have 8 hours of driving today, and right around 3 tomorrow. What a perfect time to write!

Anyway…let’s start with life lately. Last weekend, we went to Boo At The Zoo. They did a great job keeping it covid friendly and safe all around!

I love this little teddy bear SO much.

Also, in honor of the season, we have been enjoying our porch decorations.

K placed and colored most of the pumpkins and gords. Haha. I love the orange lights in the dark!

We get the keys to our new home the weekend before Thanksgiving! We are thrilled. The build is going so well, and it has been so fun watching the progress! Ahhh!!! Other than that, K has been enjoying gymnastics, and I got to have a much needed and long overdue wine date with one of my best friends!

Moving on…Today’s Treadmill Workout

I woke up early to sneak in a quick workout before our long drive. I like to get my blood flowing before sitting all day! I do this often, especially when I need a quick, yet efficient workout. *Please note that I only post workouts that work for me and my fitness level!

*1 mile jog, building pace. Then do a minute walk before getting into the main part of the workout. *6 rounds: 1 minute jog, 1 minute run, 1 minute walk. *Cool down and stretch

That’s it! Quick and to the point.

Moving on again….Let’s Bake

BAKED OATMEAL RECIPE:

Items Needed: 2 cups of oats, 1 cup of almond flour, 2 eggs, 1/2 cup of almond milk, 1/2 cup of almond butter, 1/2 cup of honey or maple syrup, 1 tsp of baking powder, 1 tsp vanilla, pinch of salt, dark chocolate chips

Mix everything well, and bake in an 8×8 dish for 30 minutes at 350 degrees F. I think next time I would add a banana to make it a bit more moist. It was a bit dense, but I enjoyed it a lot! It was also toddler approved!

Yum! I topped mine with melted almond butter.

Fall Baking Favorites

Hello, all!! I hope you are well. Fall is my absolute favorite season. I love the cool air, the activities, and best of all…the baking!! I have been doing a lot of baking lately…with a little help stirring from my sweet girl! I just wanted to share some favorites so far.

Almond flour apple muffins. I used the apples we picked from Lynd Fruit farm! They were so yummy!
This apple crisp was a traditional one because my husband didn’t want my healthy version haha. He devoured it!
Roasted pumpkin seeds! These have olive oil, salt, pepper, and a little seasoning salt.
Almond flour pumpkin muffins with dark chocolate chips! These are my favorite!!
This is a healthy apple crisp made with almond flour! It was so delicious, I ate half of it for lunch the day I made it!

Most of these recipes I found on Pinterest! I also made pumpkin pancakes and plan on making some pumpkin pie overnight oats next!

Banana Egg Pancakes With A Boost

Hello! We are back from a wonderful trip up North for my brother-in-law’s wedding. It was small, family only, and beyond perfect. We have been incredibly busy with a move, and two weekends of weddings, but now we are back and settling in which feels SO nice. Anyway, I will share more on that later. Let’s get to the point of this post….

PANCAKES!

I’m sure many of you have tried banana egg pancakes. I like them, but usually want something more substantial and satisfying. Well, after a lifting workout, I decided to make them with a few yummy additions. I devoured the whole thing.

My favorite added ingredient is leftover Criobru grounds. I have mentioned Criobru on the blog before. It brews like coffee,  has SO many health benefits, and is essentially caffeine free. I have been trying to cut back some, and it gives me a boost in the afternoon when I need it. Plus, the taste is incredible!

INGREDIENTS:

*2 eggs
*1 banana
*1/4 cup of almond flour
*1/2 tsp of cornstarch
*Leftover Criobru grounds

TOPPING:
*Almond butter
*Coconut Oil

DIRECTIONS:

*Mash banana and mix with the eggs.
*Add in all other ingredients and mix well.
*Heat a skillet with a little coconut oil and cook 1/4 of batter on both sides. Continue until all batter is used. I made 4 pancakes.
*Melt some almond butter and coconut oil together and pour over pancakes.
*Add any additional toppings you want and eat!

It’s Been A While-A Little Life Update

Hi, all! It has been quite a while since I last posted. Things have been beyond crazy around here. For starters, we are completely out of our house (finally) and moved into an apartment until our house is complete. It felt like it took forever to get everything out, and after many late nights and countless trips, we turned the keys over yesterday! Whoo hoo!!

WHAT WE’VE BEEN UP TO…

Fun:

We had a family fun day of pumpkin painting, carving, and seed roasting.

APPLE PICKING:

This is one of my absolute favorite fall activities! We had so much fun.

GYMNASTICS:

K has so much fun getting her energy out, and they have done a fantastic job of keeping it safe and clean.

LUNCH DATES WITH DADDY:

Now that we are SO close to my husband’s work, we get to stop by more often. K and I both love it!

WHOLE 30:

I completed Whole30 and loved how I felt afterwards. I have added foods back in, and made some healthy lifestyle changes.

WORKOUTS:

I have been enjoying the gym at our apartment so much! It is so nice and I have been utilizing it in the mornings as much as I can.

K and I have also been running and exploring our new area.

CURRENTLY:

READING: Harry Potter

LISTENING TO: True Crime Podcasts!

DRINKING: Bulletproof coffee and Criobru. If you have never heard of Criobru, do yourself a favor and look into it. It literally has been the most amazing drink ever! It has barely any caffeine, tons of health benefits, and tastes delicious.

Also, I had to have the pumpkin cold brew from Starbucks once this year. It was so tasy!

DOING: I finally have time to write because we are headed to my brother-in-law’s wedding in Michigan. It is going to be a small, immediate family only wedding right on the lake. We are so excited!!

Anyway….that’s about all I have for now. I am looking forward to catching up with all of your posts! It might take forever, but I’ll get there eventually haha.

Whole30 Update And Life Lately

Hello, everyone! My goodness, I haven’t updated in a while. We have been incredibly busy, as we move next Wednesday into an apartment while our home is being built.

Anyway…I am close to the end of Whole30 and wanted to updated you all.

I feel SO good. I hit a slump about halfway through and almost quit, but that quickly changed.

WHY I HAVE LOVED IT:

*I have more energy throughout the day.

*I don’t miss sugar or bread at all.

*I am in love with bulletproof coffee, and will keep having it in the mornings.

*My skin feels awesome.

*I have fallen back in love with cooking.

*I am not bloated.

*Cauliflower rice is my new favorite addition to my meals.

Here are a few yummy meals I have made.

Overall, I have loved the experience and am so glad I started and pushed through!

OKAY, moving on…

LIFE LATELY:

As I said at the beginning, moving has kept us busy, but my excitement is building so much as we get to watch our home go up. I also am excited to live with my mom for a couple months while we are in limbo until the house is ready!

K and I have been having so much fun meeting friends at the park, going to gymnastics, taking walks, and reading all of the books. Her language is increasing, and I am trying to encourage more words throughout the day.

I am so excited for fall! Picking apples and pumpkins, cool weather, and and Halloween (which will be our 5 year wedding anniversary)!

We are traveling this year for weddings and vacation. I am pumped!!
