Healthy, No Bake, Holiday Cookies And Christmas Plans

Hello, all! I woke up extra early today, but my daughter must have felt that because she is up an hour before she typically wakes up haha. Getting her out of bed is my favorite thing in the world. She gives the biggest smile, runs around in her crib, talks to the cats because they follow me, all with her curly hair in her face. Gosh, I love that kid so much!! Speaking of her, I am off to get her so this will be delayed until at least naptime lol!

Picking up and moving on. Christmas is right around the corner, which is crazy! I am super sad to be missing out on our typical extended family-filled evens, but also excited to be spending time with my family at home.

On Christmas Eve it will just be me, my husband, and K. We plan on spending the day in PJ’s, baking all the things, watching a family Christmas movie, and opening our stockings! Dinner will be takeout.

On Christmas day, we will get up, have coffee and breakfast, then open our gifts. Later in the day, my mom and my husband’s immediate family are coming over. It should be so fun! I LOVE hosting.

Let’s move on to some cookies, shall we?

K and I have been making some recipes together and this one turned out so good! She enjoys stirring and taste testing. I love egg free recipes because we can dig in while we stir.

INGREDIENTS: 2 cups of oats, 3/4 cups of almond butter, 1/4 cup of melted coconut oil, 1/4 cup of honey, 1 TBSP chia seeds, 2 TBSP almond flour, 1/4 cup of white chocolate chips, 1/4 cup of craisins, 1/4 cup of shredded coconut, pinch of salt

NOTES: I used bake believe white chocolate chips-this brand is keto and allergy friendly. I also used 50 percent less sugar craisins.

TO MAKE: Mix everything well and flatten onto a baking sheet. Once on the sheet, place it in the refrigerator for at least 30 minutes.

Mommy’s taste tester. These are definitely toddler approved!

TO MAKE CONTINUED: Remove from fridge and use your favorite cookie cutters to make shapes. These can also be formed into protein balls. We did both!

These are so yummy! My husband even loved them and he tends to stay away from healthy sweets!

Let’s Have A Saturday Coffee Date

Hello all you wonderful people! How is your weekend treating you so far? I am currently cuddled up with my kitties and drinking coffee. I always see people do the post “If We Were Having Coffee…” and I wanted to do my own version!

So…onto our coffee date!

  1. First, I would ask, “How are you doing?” Listening is just as important as sharing, and I consider myself an excellent listener.
  2. Next, I would tell you that it is almost my birthday! I am turning 29 on March 23rd. I am not 100 percent at the place I thought my life would be, but I am pretty darn lucky. I mean would you just look at this handsome guy I get to be married to! FB_IMG_1520688020538.jpg
  3. I want to share that I am struggling with where I am going in my career. I am considering going back to school, but for some reason the thought scares me a bit. I graduated college years ago, but since I want more out of life, I know it would be a good decision to get back at it. Ahhh!!
  4. I would tell you that my journey with pregnancy isn’t all I thought it would be. It has been hard, and filled with tears and MANY negative pregnancy tests. I never thought it would be this way, full of medicine and constant blood draws, but I will say that it is part of my journey, and I am learning to accept that.
  5. I would share a new friend with you!!! Blogging has become a passion of mine, and we should all lift each other up. I met a new friend, Elle, over at http://labeaute.org/ and her blog is seriously awesome. I have been going through her posts and I just love what she is about.

Healthy Chocolate Peanut Butter Cookie Cups

Good morning and happy hump day, everyone! How is your week so far!? Mine has been busy and slightly exhausting, therefore Starbucks has been my saving grace. The addiction is real! 

Anyway, I have been having a huge craving for cookies lately! Yesterday, I knew I wanted to make some, but didn’t want to run to the store after work for extra ingredients (hello lazy). As I was sitting at work, I thought about what I had at home, and came up with a recipe on the fly hoping the end result would turn out well. Somehow, they turned out even better than I expected, and it satisfied my craving! I even had one with breakfast this morning! 

This recipe made 6 cookie cups. 

INGREDIENTS:

  • 1 scoop of chocolate peanut butter protein powder 
  • 1 egg
  • 1 cup of oats
  • 1/4 cup of melted coconut oil 
  • 2 TBSP of dark chocolate chips or cacoa nibs
  • Any other mix ins you like 
  • Any filling ingredients you want (I made a cheesecake version with equal parts vanilla greek yogurt and greek yogurt cream cheese plus a touch of truvia. I also made one with almond butter and mixed nuts).


DIRECTIONS:

  • Preheat your oven to 350 degrees Fahrenheit 
  • Mix all ingredients in a mixing bowl 
  • Roll batter into balls and flatten with hands
  • Place each cookie into a muffin tin and press in the middle to make a divet in each one 
  • Bake for 12 minutes  (I started checking after 10 minutes. It might take more or less time depending on your oven)
  • Remove from oven and put any filling you desire into cups
  • Enjoy!
