Skinny Wonton Desserts Two Ways (PB Banana & Cheesecake)

Hello and happy Friday, everyone! I am so ready for the weekend! My weekend plans include sleeping in, getting cable installed, and having a date with my husband. Sounds pretty darn relaxing to me! 

Anyway,  the other day when I got home from work I wanted a snack. Typically, I reach for the almonds or a granola bar, but when I saw the wontons in my fridge I decided to use them. I love how versatile they are. You can pretty much make any meal or snack with them. This particular day,  I made two versions; Peanut butter banana and cheesecake. 

I made individual cups, but if you use a full muffin tin, it will make 12. 



  • Wonton wrappers 
  • Peanut or almond butter (2 tsp per wonton)
  • Bananas  (a few slices per wrapper)


  • Wonton wrappers
  • Greek whipped cream cheese (1 Tbsp per cup)
  • Vanilla Greek yogurt  (I used Oikos triple zero)
  • Truvia (or sweetener of choice-I used a half packet per wonton)
  • Strawberries or fruit of choice for topping

You will also need a muffin tin!



  • Preheat oven to 350 degrees F
  • place one wonton in a muffin tin and press down until it holds shape 
  • Add a tsp of peanut or almond butter in the wonton
  • Add a few sliced bananas on top of PB
  • Add one more tsp of peanut or almond butter to the top
  • Continue this process until you have made the desired amount of wontons you want 
  • Bake for 8 minutes  (cooking times may vary based on your oven)
  • Remove and enjoy


*This will not be added until after the wonton is cooked,  unlike the PB version!

  • Preheat oven to 350 degrees F
  • Place desired amount of wontons into your muffin tin and press down slightly until it holds shape
  • Bake wontons for 8 minutes  (cooking times may vary based on your oven)
  • While they are baking make your cheesecake filling by mixing 1 TBSP of cream cheese, 2 TBSP of vanilla Greek yogurt,  and a half packet of truvia (that is for 1 wonton cheesecake so adjust based on the amount you are making)
  • Remove wontons from oven and add in the filling 
  • Top with fresh fruit 
  • Enjoy!

You Might Teach Kindergarten If…

Well hi there, everyone! This morning when I got to work, I noticed something that made me laugh and realized just how entertaining Kindergartners are. This is just a short, fun list made my me and my favorite co-worker. Hope it makes you smile!


  1. You find strange things in the student’s desks. Today we found a fruit cup, a Valentine’s day sucker, and underwear…
  2. Your students have the best answers to your questions. Today, we were reading a book about transportation and this was an actual conversation: Teacher: how do you get to school? Student 1: Nemo. Student 2: a turtle. Student 3: Peanut butter. 
  3. Your students will do pretty much anything for cheese balls. These things are the best possible reinforcement in our class.
  4. You find yourself singing kid’s songs even when you aren’t work. I can’t tell you how many times I catch myself singing Usher’s version of the ABC’s. 
  5. You ALWAYS have a story. I always have the best stories to tell my husband at the dinner table.

Fit Friday-cardio and weights HIIT workout 

Happy Friday, everyone! I hope you had a great week, but if you didn’t,  I hope the weekend helps you forget about it. My husband and I are moving into our first house tomorrow. I’m as anxious as I am excited!

This morning, in the midst of packing, I wanted to get in a quick, yet efficient workout. I love high intensity workouts  because you can get so much out of 30 minutes (which is exactly how long I worked out this morning). 

This workout requires a cardio machine  (I used a treadmill) and a set of hand weights/dumbells.

Warmup for at least 5 minutes before you start!

The workout:

  • One mile run (I did a build from an easy jog to a steady run)
  • Next do 10 rounds of the following: one minute sprint, one minute weighted exercise off of treadmill 

Here are the exercises I did:

  1. Curl press
  2. Lunges
  3. Plank
  4. Back rows 
  5. Arnold press
  6. Push ups
  7. Mountain climbers 
  8. Squat with a front kick
  9. Db bench on floor
  10. Calf raises

Make sure you take a few minutes to cool down! 

*please note that I am not a personal trainer. Be careful with hiit workouts and always listen to your body. I only post workouts that work for me, and what I feel comfortable doing.

Easy Turkey Meatball Fold-over

Good morning and Happy Thursday, folks! I hope your week is going well! Mine has been busy, busy, busy! We are moving into our first house on Saturday and there is SO much to do! My stress level has been pretty high, but I know all of our hard work will pay off. Yesterday started with broken glass, a bloody finger, a super scared cat, and many tears by me. I won’t get into that, but the move is taking its toll on us. Send good vibes our way, please!


My sweet Maverick post freak out. I gave him a treat, and once I relaxed he did, too!

Anyway, this week has been all about quick, easy, yet still tasty meals. I have been trying to use up our Foldit flatbreads by the Flatout brand. They are versatile and can be used for every meal! They have only 90 calories and 7 grams of fiber. I love finding things this healthy that still taste great! Last night’s dinner had to be fast since we were heading to do house work early evening. I decided to make myself a turkey meatball fold-over and a beef meatball fold-over for my husband. I cheated with the pre-made meatballs!


(Note: this serves 1)

  • 1 Foldit by Flatout
  • 3 TBSP of pasta sauce (I used chunky green pepper and mushroom)
  • 3 to 4 sliced, already cooked turkey or beef meatballs
  • 2 TBSP of mozzarella cheese
  • Any additional toppings you like (peppers, onions, mushrooms, etc.)


Everything I used, minus the turkey meatballs I used for my fold-over.


  • Take sauce and spread over the flatbread
  • Add sliced meatballs evenly over the sauce
  • Add any additional toppings
  • Top with cheese
  • Fold into a fold-over
  • Place assembled fold-over onto a George Foreman grill (or heated pan) until cooked through
  • Serve with extra sauce and sides of your liking (I had a side of rice with mine)
  • ENJOY!!!

Grilled PB & Banana Fold-over

Good morning and happy Monday, everyone! As I attempt to blog this morning, my cats have decide to crawl all over me. They need constant attention.


That’s my baby girl, Goose. We also have a boy named Maverick. Can you tell that we like Top Gun?

Anyway, I hope you guys had a great Easter. Mine wasn’t completely traditional. My husband and I are moving next weekend, so after church we spent the day working on our house. His wonderful family came to help and spend the day with us. We took a long walk and ate a delicious meal his mom cooked, but most of the day was spent working.

Okay, now the reason you are here! FOOD!! Yesterday morning I was extra hungry and wanted something sweet. I just bought Foldit flatbread by Flatout (I’ll post a pic if you don’t know what that is). These are awesome and can be used in SO many ways.


These are the

This serves 1 person.


  • 1 Foldit flatbread
  • 1 banana
  • 2 TBSP of peanut butter (or almond butter)
  • A drizzle of honey
  • A dash of cinnamon


  • Lay flatbread on a plate and spread peanut (or almond) butter across the whole thing.
  • Slice banana and place on flatbread.
  • Drizzle honey all over the bananas.
  • Sprinkle cinnamon across the top.
  • Fold the flatbread over and place on a George Foreman grill (this is what I did) or a heated pan until cooked on both sides.
  • ENJOY!!
