A Little Update, Today’s Workout, And My Baked Oatmeal Recipe

Hello, hello!! Happy Friday! I have struggled to keep a consistent writing schedule, but that’s mom life I guess. We are currently in the car on our way to North Carolina for vacation. The Outer Banks is my favorite vacation spot, and we have been going since I was little. I am SO excited to be there. We have 8 hours of driving today, and right around 3 tomorrow. What a perfect time to write!

Anyway…let’s start with life lately. Last weekend, we went to Boo At The Zoo. They did a great job keeping it covid friendly and safe all around!

I love this little teddy bear SO much.

Also, in honor of the season, we have been enjoying our porch decorations.

K placed and colored most of the pumpkins and gords. Haha. I love the orange lights in the dark!

We get the keys to our new home the weekend before Thanksgiving! We are thrilled. The build is going so well, and it has been so fun watching the progress! Ahhh!!! Other than that, K has been enjoying gymnastics, and I got to have a much needed and long overdue wine date with one of my best friends!

Moving on…Today’s Treadmill Workout

I woke up early to sneak in a quick workout before our long drive. I like to get my blood flowing before sitting all day! I do this often, especially when I need a quick, yet efficient workout. *Please note that I only post workouts that work for me and my fitness level!

*1 mile jog, building pace. Then do a minute walk before getting into the main part of the workout. *6 rounds: 1 minute jog, 1 minute run, 1 minute walk. *Cool down and stretch

That’s it! Quick and to the point.

Moving on again….Let’s Bake

BAKED OATMEAL RECIPE:

Items Needed: 2 cups of oats, 1 cup of almond flour, 2 eggs, 1/2 cup of almond milk, 1/2 cup of almond butter, 1/2 cup of honey or maple syrup, 1 tsp of baking powder, 1 tsp vanilla, pinch of salt, dark chocolate chips

Mix everything well, and bake in an 8×8 dish for 30 minutes at 350 degrees F. I think next time I would add a banana to make it a bit more moist. It was a bit dense, but I enjoyed it a lot! It was also toddler approved!

Yum! I topped mine with melted almond butter.

A Few Favorites-Fall Edition

Hello and happy weekend! I am up before the family, enjoying a cup of coffee and some almond flour banana bread. I love mornings to myself. I get to enjoy the quiet and “me-time” before the day starts.

This afternoon, we are going to “Boo at the Zoo.” I am SO excited. K is going to be a teddy bear, and I have a mamma bear shirt and ears. My mom and mother-in-law are coming, too! I love that we can have an outdoor, safe Halloween activity for K.

Today, I wanted to share some of my favorite Fall things…

COOL MORNING RUNS: There really is something about the crisp, Fall air that makes my runs SO much better.

PODCASTS: I think my true crime podcasts are extremely fitting this time of year. A few favorites are My Favorite Murder, Crime Junkie, Morbid, Full Body Chills, and Dateline.

SNACKS AND BAKING:

I found these at Aldi, and oh my gosh…YUM.

FOOTBALL JERSEYS:

We are Cincinnati Bengals fans! Well, I am…my husband is not. Also, this picture was from when K was sick, so she has a pedialyte popsicle.

READING: I am currently reading the Harry Potter series.

TV SHOWS: I have been watching Ratched on Netflix and oh my goodness it is creepy and so addicting! Not for the faint of heart, that’s for sure. I am also watching the Bachelorette….it has always been a guilty pleasure haha.

DECORATIONS: I haven’t taken pictures of ours, but I love decorating! Our porch looks so cute and festive!

That’s all I have for today! K will be up soon, and I will be on mom-mode all day. I am looking forward to her morning hug! I love this mom life!

Fall Activities With Toddlers

Hello, and happy Sunday! My little one developed quite the cold overnight and feels pretty yucky. She is trying to sleep on my husband, and I am laying next to them. The changing weather always does this. Ugh!

Fall has always been my favorite season, despite the sickness that seems to come every year. The weather is perfect to get outside without being too hot or cold. We have had an absolute blast this Fall. K is so fun and curious this year and I absolutely love it! I am going to share some of our favorite things we have done so far (all while socially distancing).

Farm fun! K got to feed goats, have fall muffins, take a hayride, and pick pumpkins.
Choosing the perfect pumpkin.
Painging gourds and pumpkins! We put her in just a diaper when she painted her pumpkin and she ended up painting herself, too! It was so fun and messy!
We did a hayride during the weekday when there was only a few other people at the local farm. It was a great way to spend the afternoon!
Halloween stickers! K absolutely loves these!! My mom got her a ton from the dollar tree.

We have also done apple picking and a lot of baking!

If she is better by next weekend, we plan on going to Boo at the Zoo.

Well friends, that’s all for today. I am off to spend the day cuddled up with my sweet family!

Fall Baking Favorites

Hello, all!! I hope you are well. Fall is my absolute favorite season. I love the cool air, the activities, and best of all…the baking!! I have been doing a lot of baking lately…with a little help stirring from my sweet girl! I just wanted to share some favorites so far.

Almond flour apple muffins. I used the apples we picked from Lynd Fruit farm! They were so yummy!
This apple crisp was a traditional one because my husband didn’t want my healthy version haha. He devoured it!
Roasted pumpkin seeds! These have olive oil, salt, pepper, and a little seasoning salt.
Almond flour pumpkin muffins with dark chocolate chips! These are my favorite!!
This is a healthy apple crisp made with almond flour! It was so delicious, I ate half of it for lunch the day I made it!

Most of these recipes I found on Pinterest! I also made pumpkin pancakes and plan on making some pumpkin pie overnight oats next!

Banana Egg Pancakes With A Boost

Hello! We are back from a wonderful trip up North for my brother-in-law’s wedding. It was small, family only, and beyond perfect. We have been incredibly busy with a move, and two weekends of weddings, but now we are back and settling in which feels SO nice. Anyway, I will share more on that later. Let’s get to the point of this post….

PANCAKES!

I’m sure many of you have tried banana egg pancakes. I like them, but usually want something more substantial and satisfying. Well, after a lifting workout, I decided to make them with a few yummy additions. I devoured the whole thing.

My favorite added ingredient is leftover Criobru grounds. I have mentioned Criobru on the blog before. It brews like coffee,  has SO many health benefits, and is essentially caffeine free. I have been trying to cut back some, and it gives me a boost in the afternoon when I need it. Plus, the taste is incredible!

INGREDIENTS:

*2 eggs
*1 banana
*1/4 cup of almond flour
*1/2 tsp of cornstarch
*Leftover Criobru grounds

TOPPING:
*Almond butter
*Coconut Oil

DIRECTIONS:

*Mash banana and mix with the eggs.
*Add in all other ingredients and mix well.
*Heat a skillet with a little coconut oil and cook 1/4 of batter on both sides. Continue until all batter is used. I made 4 pancakes.
*Melt some almond butter and coconut oil together and pour over pancakes.
*Add any additional toppings you want and eat!
