Hello and happy Friday!! Did the time change throw anyone else off? The whole past week has been rough on me and my daughter’s sleep. My husband seemed unfazed though! I have been waking up incredibly early, and falling asleep early as well. I finally feel like my body has regulated. Last night I fell asleep at 8 and didn’t wake up until 6 this morning. I missed a class that I teach unfortunately, but my body needed it!
Moving on, let’s talk food. Starting off, I have to share my newest obsession. Weeks ago, I was at Sam’s Club and had a sample of these dried mushrooms. I didn’t know I would like them, but OH MY GOSH they are amazing!!!! I can’t stop eating them!
Seriously….go get these!!!
Moving on to some dinners…
Chipotle bowl, but I put all of my toppings on cauliflower rice that I made at home! YUM!!Farmhouse Chili with homemade almond flour cornbread muffins. They were fantastic!A huge salad from Core Life Eatery!Chicken, veggies, and avacado over cauliflower rice. Spaghetti Squash with sautéed spinach, pesto, cheese, and garlic. SO yummy!!
Now onto baking and breakfast…
Healthy cinnamon sugar mini donuts!! GUYS…this is my own recipe and it turned out amazing! I will share it soon!Banana egg pancakes with almond flour, Criobru grounds, topped with melted coconut oil and almond butter.
