Fit Friday-A Week Of Healthy Eating And Workouts

We made it to Friday!! Yay! In a few hours I will officially be on break from work for 2 weeks! We have some traveling to do for Christmas, and I am excited to spend time with our families. 

This week was a good one for food and fitness. I stayed on track, especially because I like to indulge over the holiday.


I took the day as a rest day, so I didn’t workout.

For dinner, I made a southwest salad kit and added coconut oil fried plantain, chicken, cilantro, and Opa ranch dressing. 


After work, I took my regular workout class called the C9 challenge. 

Once I got home, I made pasta with lean ground beef, chunky sauce, and cheese. I also had an english muffin. 


I took an early morning spin class, which kicked my butt as usual. 

After work, my mom came over and we grabbed dinner at Whole Foods. I LOVE their salad bar! I also had sweet potato and quinoa soup.  YUM! 


My morning workout was TCX  (total conditioning extreme). I love starting the morning with a full body cardio and strength class.

That evening we had my husband’s work Christmas party. It was at a bowling alley, and we had a lot of fun. I decided to eat beforehand so that I could have something healthy. 

I had a flatbread pizza on a wheat crust and salad. 


Breakfast was so tasty this morning! I used my ceramic egg cooker to make oats with almond butter and a Justin’s almond butter cup. SO GOOD. 

After work, I did 30 minutes of cardio (half on the treadmill and half on the stair climber). Quick and efficient!

My husband and I decided to do an easy dinner,  so we made Campbell’s chunky soup. I had mine with a salad and english muffin.


I woke up early for a workout class called gluteus maxout. It is fun to do a class focused on lower body!
