Arepas, healthy food

Arepas Recipe Plus Our Weekly Girl’s Night

Hi there, everyone!! How Are you today? I hope the beginning of your week is treating you well so far. I am finding myself wishing it away.  I’m already ready for the weekend.

Once a week (since college) my girlfriends and I get together to cook and hang out. We always have a blast trying new recipes and watching our shows. Last night we made Arepas and watched the Bachelorette. It is so much fun spending time with the girls!

Have you guys ever made Arepas? This was my first time, but they turned out so good!! Now, they definitely weren’t gorgeous, but at least they were tasty and pretty easy to make.

INGREDIENTS:

For the Arepas:

  • PAN cornmeal
  • Water

That is literally all you need for the Arepas themselves. Toppings are up to you, but I will share what we did!

DIRECTIONS:

  • Prepare according to package  (you mix the cornmeal and water and let sit 3 minutes)
  • Form dough into 10 patties
  • Pan fry (we fried them with coconut oil spray) until golden on both sides
  • Top with toppings of choice!

not perfect at all, but getting the job done!

Above is post frying!!

cilantro lime dressing! We used 1/2 cup of olive oil, one avacado, fresh parsley, garlic, cilantro and lime juice! It was awesome.

yum!

topped with shredded chicken, black beans, cheese, avacado, and lettuce!

What a fun dish to try! Let me know if you guys try it, or have tried it before! I’d love to hear how you make them!

Have an awesome day!!

With love,

Carly

  1. Hey Carly, great post!
I have never heard of, ate, or seen anything like that before in my life! And its not like I have been living under a rock or anything!
Wow, the cilantro and lime dressing looks amazing and those toppings definitely add a layer of awesomeness.
I will have to keep this in mind next time I have some friends over! Thanks for the recipe 🙂
