Healthy and Sweet Breakfast Pizza (2 ways)

Good morning and happy Saturday, everyone!! This morning has been bliss. I was able to sleep in, enjoy coffee with my husband, make a delicious breakfast pizza, and just simply relax. After another busy week, this is just what I needed to recoup. I cannot wait to share this recipe with you guys. I went to Trader Joe’s yesterday just to stock up for this. It has been in my head all week, but I knew I had to wait for the weekend to have time to prepare and cook it.

THE RECIPE

The first thing you will need to do is preheat your oven to 375 degrees F.

Take a flatout bread (I used an off brand from Aldi and it worked great), and cut it in half (or fourths). I did half, but fourths would probably have been easier. After that is ready, spray a baking sheet with cooking spray and place the flatbread pieces onto it.

Next you will get together the ingredients for each side.

SIDE ONE

  • 1 TBSP of almond butter
  • half a banana (sliced)
  • 1 TBSP cacao nibs
  • A drizzle of honey
  • A dash of cinnamon

This side you will just assemble onto the pizza, no further cooking necessary.

SIDE TWO

  • 5 pitted dates
  • Greek, vanilla yogurt
  • Half a small apple (I used Fuji)
  • Ground cinnamon
  • Coconut oil (for frying apple)
  • 1 TBSP honey

This side takes a little more prep than side one. Soak the dates for around 10 minutes. While they are soaking, cut a small apple in half, then chop into pieces. Once they are chopped, heat a small pan with coconut oil and place apples in on medium heat. Mix the apples, then drizzle in honey and cinnamon and continue stirring occasionally until soft.

Once the dates are done soaking, place them into a Ninja blender or Vitamix. Add a few TBSP of water and mix until a paste forms. You can add as much water as needed throughout the mixing process. I left mine a little chunky and loved the consistency of it.

Once the oven is heated (and while you are prepping each side), place the flatbread sides into the oven for 10-12 minutes.

Once the flatbread sides are done, take them out and begin assembling.

For side 1- spread almond butter onto flatbread slice, top with sliced bananas and cacao nibs. Finish by drizzling with honey, and dusting with cinnamon.

For side 2- mix together dates and small amount of vanilla greek yogurt. Spread onto flatbread. Then take your fried apples and spread an even amount over top.

There you go, folks!! This recipe will easily serve two people (or one very hungry person). I enjoyed mine with a dark roast coffee and almond creamer. Tomorrow I am going to do a savory version so stay tuned! Now it is off to the gym and furniture shopping with my wonderful husband!
